Chicken Surprise
I actually had a really interesting dinner last night. I worked really late and did not end up getting home until after 9. I had chicken sitting out defrosting since the night before so I knew I had to make it. I was thinking I would just put a marinade on it and grill it the following morning, but when I started to mix up a marinade I realized it would probably be better as a glaze, and decided to cook it that night. All I ended up having was one piece of chicken, after all was said and done, but I was surprised at how delicious the glaze was. I never made this type of glaze, but just started pulling things out of the pantry and it seemed to work well together. It was a sweet mustard glaze. I think I’ll make it again soon!
